Dough Mixing

The SCE150 continuous mixer with integrated centrifuge ensures uniform mixing of semolina, reducing lump formation and limiting oxidation thanks to a low-turbulence system.

Sheet Forming and Cutting

The sheeting and cutting unit with automatic die change allows seamless switching between formats (lasagna or tagliatelle), without downtime or manual disassembly. Cutting precision is guaranteed by electronically controlled servomotors.

Intelligent Pasteurization

The steam pasteurizer includes a controlled condensation system that prevents moisture buildup on the pasta sheet. The result: no mold, improved texture, and extended shelf-life.

Drying and Cooling

  • Hot air drying zone with alternating airflow;

  • Forced-air cooling with hygienic air management via HEPA filters, reducing product temperature to below 20°C without thermal stress.

Folding and Tray Packaging

The patented gentle folding and depositing system arranges the pasta in the tray in an orderly, natural fashion — without pressure or crushing. The final look replicates a handcrafted “homestyle” appearance, with added benefits in preservation.

MAP Packaging

The thermoformed trays are immediately ready for modified atmosphere packaging, enabling a shelf-life of 60–70 days, which can be extended up to 4–5 months with additional treatments.
