Lines in question are intended to produce quickly cooking pasta of any type.
The whole range of the plant for fresh pre-cooked pasta includes:
lines consist of a dough mixer with calibrator or a press, or of one or more forming machineries in case of filled pasta is treated, a water cooker (a steam cooker shall be used in some cases), a system for washing and cooling the product. If necessary the forming machineries can be supplied with an automatic shuttle. Once undergone the treatment, the pasta is packaged together with some seasonings. After opening the package, the consumer only have to soak the pasta in hot water and add their sauces. In the specific case of regional typical pasta as Spätzle, Schupfnudeln, etc., the plant is composed of a mixer followed by a special head for the forming of Spätzle or Schupfnudeln and a cooker for their pre-cooking (steam or immersion).
The characteristics of the finished product are similar to those of any pre-cooked pasta.
